Yep! Thats what he said, that "no one in the world made pancakes this good." Such a compliment! So I have been eating raw most of the time but just buckled and made some vegan pancakes. SO GOOD they make you wanna slap yourself!
Here is the recipe:
First mix the dry ingredients in a large bowl:
Teff flour (1 Cup)
Whole grain pancake mix (1/2 Cup)
Flax meal (1/4 Cup)
Egg Replacer (2 Eggs Equivalent)
Baking Soda (1 1/2 teaspoon)
Baking Powder (1 1/2teaspoon)
Apple Pie Spice (2 teaspoons)
Dried coconut (optional)
Now for the wet ingredients- Puree the following ingredients in your blender
Apple (1 cored)
1 1/2 C Almond milk
1 t Vanilla
1" ginger root
Juice of 1 Lemon
1-2 T Sweetener (agave nectar, or your choice)
Create a well in the dry ingredients, pour wet ingredients over, mix well. Next I folded in about 2 Cups of Blueberries (this is optional of course). Melt Coconut Oil on your skillet. Use a 1/4 Cup to pour pancakes on the skillet. When Pancakes bubble, then flip. These pancakes will melt in your mouth and please your loved ones!!!! I made this and then washed them down with a big beautifully green smoothie:)

Kale Chips- WOW!!!!!!
KALE CHIPS are my favorite dehydrated snack- I think these can be made in an oven set really low as well- you may want to google it if you do not have a dehydrator.
1 (or more) bunch of kale (curly)
Olive Oil
Braggs
Apple Cider Vinegar
Lemon Juice
Pepper (black, cayenne)
Herbs (thyme, rosemary, oregano)
Jerk seasoning is optional
Nutritional Yeast is optional
Wash thoroughly then Remove center tough spine on the kale leaves. Break the kale leaves into 2 to 3 inch peices. place in a large bowl. Add all of the other ingredients on top of leaves, get a thorough coating of all of the seasonings on the leaves. Lay the leaves on the dehydrator trays and dehydrate for a couple of hours or however long is suitable in yours. I am telling you these are awesome! The lemon is incredible with the spice!!!

Kale Chips Continued
Tomato or Mango and Herb Salsa
This salsa is so delicious, flavorful and easy to make:) And it the recipe works with either tomato or mango, which ever you have on hand. I make it A LOT in the summer because I grow a lot of heirloom tomatoes on the rooftop. I am listing many of the ingredients that are possible to use- you can vary this recipe a bit based on what you have on hand however the key ingredients are the tomatoes, the lime, and fresh herbs. Enjoy!
Tomatoes (organic, heirloom, grape, or cherry) OR Mango
Cilantro (fresh) OR Basil (fresh)
Parsley (fresh)
Jalapeno -1
Onion (red, green) and/or Bell Pepper
Raw Corn (optional)
Garlic
Juice of at least one lime
1 T cold pressed oil (optional) olive, hemp, flax
Fresh cracked pepper
Pinch of sea salt
Quarter/Chop Tomatoes OR Mangoes. Lay herb leaves flat, roll up, slice thin. Slice jalapeno in half, keep seeds and spine if you like the spice, remove if you do not want spicy. slice horizontally then vertically to create small peices. Chop onion. Shuck the corn then cut it off the cob. Roll the lime on the counter to soften the lime, Cut lime in half squeeze the lime juice into a separate bowl, squeeze it some more, then cut the pulp of the lime out and get as much of the pulp as you can. Spoon the seeds out of the lime juice, now pour the juice and pulp onto the tomato mixture. Cut the bottom of the garlic clove off, lay the clove flat and smash it with either the side of a large knife or a spoon, now the peel removes easily. Add the rest of the ingredients to your liking, stir and enjoy the same day or next day.

These are a few of my favorite things!
Avocados- I try to eat daily. Avocados are a super food, they are delicious, so beneficial, and full of vitamins, minerals. Then we have garlic, and fresh rosemary- all essentials in my kitchen:)
Raw Dessert- Apricot Bars
I bragged about these approximately 8 posts down....these are quick and easy to make and are very pretty cut into bars- I usually make them when I want a treat in a hurry so I have not gotten a great photo yet, but.... YUM! I am making these later today- cashews, dried apricots, vanilla bean, coconut oil....all thrown in the food processor and creamed together, then pressed in a coconut oil greased pan.

A gift from Mother to Daughter that I was blessed to be a part of. My girlfriend commissioned me to make these pillows for her daughter who has moved out of town as mementos of home and growing up:) SO SWEET!!! It was fun to be a part of this special gift!

Here is the pillow Habashi made for GiGi. The photograph was from our trip to Michigan this past summer. GiGi had mentioned that she loved this shade of purple (so royal!) so we found this linen specifically for her, the tassles are sewed on with copper beads that complement the sunset:)

What has been keeping me entertained
So, this blog goes on and on about all kinds of stuff and I originally started it to share the TRUTH about living clean and healthy! Well, I have still been living clean and healthy and eating A LOT of greens, sprouts, fruits and veggies however it has been a very creative time for me so by the time I get ready to eat I don't feel like gettin out the camera- I feel like EATING to LIVE:) The holidays have come and gone since I last posted and now I want to share with you the gifts we made this year and some inpirational photos to prepare us for spring! Yup, it is time to start planning that garden!
