Vegan Carrot Soup

Wow! This soup was amazing! This is a vegan carrot soup with cilantro and avocado garnish. Let me tell you how I made it because you have to try it! First I lightly sauteed garlic, onion, and ginger in olive oil. Next I peeled and cut into smaller peices at least five carrots. I combined the carrots in with the sauteed garlic, etc. and covered everything with filtered water. I let the carrots simmer until they were soft in the middle, and drained off some of the water, and mixed in coconut milk. My food processer is small so I had to do the next step in batches- Puree the soup and will pureeing mix in curry, and allspice. And what you will have is a creamy, smooth, delicious soup that you will wish you had more of! And by the way- obviously this soup is not raw- however every once in a while I will prepare vegan cooked food. Peace up, and Give thanks!
