Yummy Raw Vegan Tacos:)

"Ali's Tacos"
This recipe is very flexible. I have included the basic ingredients which can be adjusted based on your preference or what you have on hand.

Ingredients:

Non-meat filling
Brazil Nuts (at least 1 Cup)
Walnuts (at least a 1/2 Cup)
Sun-dried tomatoes (at least a 1/2 Cup)
Cumin-1/2 teaspoon
Cayenne-pinch
Chili Powder-1 teaspoon
Pepper-pinch
Taco Seasoning- this is not all that necessary if you add the ingredients above-(at least one teaspoon)
Jerk seasoning- (I sometimes add this- optional)

Salsa/Guacomole
Juice of at least one Lime (I often use two limes- personal preference)
1 diced avocado (more if you like)
Red or Yellow Bell pepper- diced
Cilantro- fresh, diced
Choose one fruit- mango or tomatoes
Green Onions or Red Onion- chopped
Jalapeno Pepper- diced (optional)
Freshly Cracked Pepper
Sea Salt (pinch)

Taco Shells
Leaf lettuce- your preference... romaine, butterhead, green leaf lettuce

Preparation time- 15 minutes TOPS
Mix the Non-meat filling ingredients in a food processor or Vitamix until crumbly well blended.. it should be crumbly without chunks of nuts left.... the mixture ends up looking like traditional ground beef taco filling
Chop, combine, and gently mix Salsa ingredients

Top lettuce leaves with filling and then the salsa.  Give Thanks, Eat, Enjoy!!!!

This keeps really well and the filling tastes even better the next day (and days after).  I often make a big batch and add the filling to salads and lettuce wrap sandwiches for days:)  Love and Respect, Ali

They had a hard time getting this one down...

Part of our neighborhood has been torn down to build casinos- historical buildings built strong are hard to take down so it took quite a while to get them down. The historic architecture was built to last, and aesthetically beautiful; to bad they couldn't incorporate the old buildings into the overall design in leue of staying true to the neighborhood. Now they are about to slap up these casinos... hmmmm.... I'm just not sure how I feel this will be for the neighborhood; I just don't see it as a good thing. Now the streetcar on the other hand- BRING IT!!! Peace and Blessings from OTR.
